¼ cup extra virgin olive oil 3 cloves of garlic finely chopped ½-1 lb beef or sausage diced small or ground (we finely chopped a leftover steak that was grilled last night) 6-8 medium potatoes peeled and diced to ½ inch 1 bunch of broccolini with the ends of the stems trimmed off (about an inch like you would asparagus) 1 beef bouillon cube (optional)
Heat oil in a deep skillet and throw in the garlic. When the garlic just starts to brown (only takes a minute or so) add the broccolini (I chopped them into 2-inch pieces first). Cook the broccolini in the hot oil for a few minutes, then add the meat and allow it to brown. Add the potatoes and cook for another 3-4 minutes. Add 2 or 3 cups of water and the bouillon cube and reduce heat to a simmer (the water should just barely come to the top of the mixture). Simmer for 20 minutes or until the potatoes are cooked through (we like ours pretty mushy so I let it go a bit longer). Salt and pepper to taste.
